Hasselback potatoes with pork

Potatoes cook this way are delicious and children love them!

Serves 4

4 medium roasting potatoes
50g melted butter
salt, to taste
black pepper, to taste
rosemary sprigs for garnish

Preheat oven to 220°C.
Cut vertical slices, 3-4 mm apart, three quarters of the way through the potatoes.
Place potatoes cut side up in a roasting pan, brush with melted butter and sprinkle with salt.
Place in preheated oven and roast for about 40 minutes or until cooked. Baste during cooking.
Serve with roast pork, green beans, roast kumara, parsnip and pumpkin.Garnish with black pepper and rosemary sprigs.
