Potato and Blue Cheese Tart

A rich and elegant tart that pairs the earthy flavour of potatoes with sweet caramelised onions and creamy blue cheese. Perfect for entertaining, lunch with friends, or alongside a fresh green salad.

Serves: 6

Ingredients

  • 1 sheet quality puff pastry
  • 3 medium potatoes, thinly sliced
  • 2 large onions, sliced
  • 2 tablespoons olive oil
  • 100g blue cheese, crumbled
  • 1 tablespoon fresh thyme leaves
  • 1 egg, beaten
  • Salt and freshly ground pepper

Method

  1. Preheat the oven to 200°C.
  2. Heat the olive oil in a frying pan over medium heat. Add the onions and cook gently for 20 to 25 minutes until soft, golden and caramelised. Set aside to cool slightly.
  3. Place the puff pastry onto a lined baking tray. Using a sharp knife, score a border approximately 2cm from the edge without cutting all the way through.
  4. Spread the caramelised onions evenly over the pastry, staying within the border.
  5. Arrange the potato slices over the onions, slightly overlapping them. Season with salt, pepper and thyme.
  6. Scatter over the blue cheese.
  7. Brush the pastry border with beaten egg.
  8. Bake for 30 to 35 minutes until the pastry is crisp and golden and the potatoes are tender.
  9. Allow to rest for 5 minutes before slicing.

Serving suggestion: Finish with a handful of rocket and a drizzle of balsamic glaze.
