A classic French Canadian potato dish: Poutine
Poutine Machine is the brainchild of Canadian Nathan Ryckman, who started his Auckland food truck to share the French-Canadian specialty, Poutine, with Kiwis.
Poutine is French fries, cheese curd – a fresh cheese akin to Haloumi or Mozzarella – and gravy. Nathan uses his own special recipe, a gluten-free, vegan take on Julia Child’s Sauce Brune (brown sauce).
Nathan always uses NZ-grown potatoes, and he tries to get skin-on fries, which he says makes for crispier results.
Nathan says Kiwis have taken to poutine. “After all, what’s not to like about potatoes and gravy and cheese curd!”
