
Hedgehogs can be made with any vegetable that can be mashed; they are so popular with little kids.
Serves 1
1 cup mashed potato, kumara, parsnip or pumpkin
½ cup raw carrot, sliced into little sticks (or grated)
2 currants or sultanas for ‘eyes’
2 pieces of celery for ‘eyebrows’
1 small piece of cherry tomato or radish for a ‘nose’
Place potato in a ‘hedgehog shaped’ pile on the plate.
Scatter carrot over the ‘body’ excluding the pointy face end.
Place eyes and nose in position.
Variation: Add grated cheese to the mashed vegetables.
