Use baked potato instead of a bun for these delicious and very filling burgers.
Makes 1
1 baking potato
1 tsp vegetable oil
1 meat patty (gluten free)
1 Tbsp sour cream
1-2 slices tomato
freshly ground black pepper, to taste
Optional ingredients:
1 Tbsp tomato sauce
1 tsp wholegrain mustard
¼ spring onion sliced
1-2 lettuce leaves
1 slice of Edam or Colby cheese
Preheat oven to 200°C.
Select large baking, roasting or general purpose (floury) potatoes.
Prick the potato several times with a fork.
Bake potatoes in preheated oven for 50-55 minutes or until soft.
Heat oil in frying pan and cook meat patty.
Slice potato in half length ways. Spread sour cream on bottom half, add tomato slices and any optional ingredients. Add cooked meat patty and pepper and serve.
Variation: Cook potatoes in the microwave on high power for 3-4 minutes per potato.
