The addition of apple combines well with the pork and roast vegetables.
Serves 4-6
4 lean rashers bacon
4 pork steaks or chops
6 medium roasting potatoes, cut into chunks
2 Tbsp vegetable oil
pinch of salt
freshly ground black pepper, to taste
2 cloves garlic, peeled
2 carrots, peeled and sliced into pieces
1 kumara or parsnip, washed and sliced into pieces
1 leek, washed and sliced into chunks
1-2 apples, cored and sliced into quarters
Preheat oven to 200°C.
Wrap a rasher of bacon around each pork steak and set aside.
Toss remaining ingredients together in a bowl. Spread into a single layer on a large baking tray, then add pork.
Place in preheated oven for 25 minutes or until meat is tender and juices run clear.
Serve with steamed seasonal green vegetables.
