Potato and Blue Cheese Tart
A rich and elegant tart that pairs the earthy flavour of potatoes with sweet caramelised onions and creamy blue cheese. Perfect for entertaining, lunch with friends, or alongside a fresh green salad.

Ingredients
- 1 sheet quality puff pastry
- 3 medium potatoes, thinly sliced
- 2 large onions, sliced
- 2 tablespoons olive oil
- 100g blue cheese, crumbled
- 1 tablespoon fresh thyme leaves
- 1 egg, beaten
- Salt and freshly ground pepper
Method
- Preheat the oven to 200°C.
- Heat the olive oil in a frying pan over medium heat. Add the onions and cook gently for 20 to 25 minutes until soft, golden and caramelised. Set aside to cool slightly.
- Place the puff pastry onto a lined baking tray. Using a sharp knife, score a border approximately 2cm from the edge without cutting all the way through.
- Spread the caramelised onions evenly over the pastry, staying within the border.
- Arrange the potato slices over the onions, slightly overlapping them. Season with salt, pepper and thyme.
- Scatter over the blue cheese.
- Brush the pastry border with beaten egg.
- Bake for 30 to 35 minutes until the pastry is crisp and golden and the potatoes are tender.
- Allow to rest for 5 minutes before slicing.
Serving suggestion: Finish with a handful of rocket and a drizzle of balsamic glaze.
