Potato wedges with chorizo and spinach saladSimple and seriously delicious!

Serves 2

2-3 medium roasting potatoes, washed and sliced into wedges
100g chorizo, diced
1-2 Tbsp French dressing
8-10 cherry tomatoes, halved
1-2 cups baby spinach leaves
1-2 Tbsp pine nuts, toasted

Preheat oven to 200°C.
Place potatoes and chorizo in a roasting tin and add French dressing. Toss to coat.
Bake in preheated oven for approx 20 minutes, turning once half way through. Add tomatoes for the last 5 minutes.
Place spinach and pine nuts on a serving dish.
Top with hot potato mixture, extra French dressing and serve warm.
