Mash brunch

This is great any time of the day but tastes especially good as a weekend or holiday treat.

Serves 4

4 medium mashing or baking potatoes, peeled and sliced into chunks
½ cup milk, heated
3-4 rashers bacon
2 spring onions, finely chopped
pinch salt
freshly ground black pepper, to taste
4 eggs, poached

Cook potatoes in boiling water for 15 minutes or until tender, drain.
Pour milk over the potatoes and mash until smooth.
Grill, pan fry or microwave bacon until crispy then chop roughly.
Stir into mashed potato with spring onion and salt.
Serve with a poached egg and black pepper on top.

To boil potatoes:
Place potatoes in a heavy-based saucepan and add sufficient cold water to just cover.
Place a lid on the saucepan and bring to the boil as quickly as possible, reduce heat and simmer gently.
Cook for 15-20 minutes or until tender when tested with a skewer or tip of a knife.
Add extra boiling water if necessary. Drain.

Note: Always simmer vegetables as vigorous boiling will cause some vegetables to break up.
