Noisette potatoes with grilled prawns

Try this classic potato dish – so delicious!

Serves 4

800g general purpose potatoes
canola oil
salt and pepper, to taste
chopped parsley for garnish

Preheat oven to 230°C.
Use a melon baller to make small potato balls.
Heat the oil in a heavy based pan, add potato balls and cook until golden. Transfer to a baking dish, season with salt and pepper, place in preheated oven and continue cooking until the middle is soft when pierced with a knife. Turn during cooking.
Remove from the pan when cooked and drain on absorbent paper.
Garnish with parsley and serve with grilled prawns, a lemon wedge and salad leaves.
