Potato and Halloumi Waffles
Crispy Potato and Halloumi Waffles with Avocado and Poached Eggs
These savoury waffles are a delicious alternative to hash browns and make an impressive brunch or light lunch. The potato creates a crisp golden exterior while the halloumi adds a salty, cheesy flavour that pairs beautifully with creamy avocado and perfectly poached eggs.

Ingredients
For the waffles
- 500g potatoes, peeled and grated
- 150g halloumi, grated
- 2 eggs
- 3 tablespoons plain flour
- 2 tablespoons chopped parsley
- Freshly ground black pepper
To serve
- 2 avocados, sliced
- 4 poached eggs
- Chilli flakes
- Microgreens or rocket
Method
- Place the grated potato in a clean tea towel and squeeze out as much liquid as possible.
- Transfer the potato to a large bowl and add the halloumi, eggs, flour, parsley and pepper.
- Mix thoroughly until evenly combined.
- Preheat a waffle iron and lightly grease with oil.
- Spoon the potato mixture into the waffle iron and cook for 6 to 8 minutes until golden brown and crisp.
- Repeat with the remaining mixture.
- Top each waffle with avocado slices and a poached egg.
- Sprinkle with chilli flakes and fresh greens.
Serving Tip
For a café style brunch, add smoked salmon and a squeeze of lemon.
