Salmon and cream cheese mash
This transforms mash into something extremely special! Serves 2-3 500g mashing potatoes, peeled and diced 100g low fat cream cheese 75g smoked salmon, thinly sliced 50g pitted black olives, sliced (optional) 1 Tbsp capers (optional) 2 Tbsp chopped chives pinch salt freshly ground black pepper, to taste Boil potatoes for 8-10 minutes or until tender….
