Spicy wedges with turkey burgers

Turkey burger with potato wedges

A gourmet twist on the classic burger and chips meal.

Serves 4

4 large roasting potatoes, sliced into wedges
2 Tbsp vegetable oil
1 Tbsp fajita seasoning mix
grated rind of 1 lime
2 Tbsp chopped coriander
pinch salt
freshly ground black pepper, to taste
500g minced turkey

Preheat oven to 200°C.
Place potatoes on a large baking tray.
Sprinkle with 1 tbsp oil and fajita seasoning, stir to ensure potatoes are covered.
Bake in preheated oven for approx 15 minutes.
Add grated lime rind, coriander, salt and pepper to the turkey mince.
Shape mixture into 4 burgers.
Heat remaining oil in a frying pan until hot and pan fry the burgers for 4-5 minutes. Turn and cook a further 4-5 minutes or until the juices run clear when pierced with a knife.
Cut the lime into wedges.
Serve burgers and potato wedges with the lime wedges and fresh tomato salsa.

Tip: The burgers can be cooked, cooled and frozen, and then when required thaw and cook until piping hot.
