Tikka masala potatoes with mango chicken

Tikka masala potatoes

Spice up potatoes with a ready-made sauce.

Serves 2

300g chicken breast, cut into thick strips
1 Tbsp mango chutney
400g boiling or new potatoes, diced
1 red capsicum, deseeded and diced
250g Tikka Masala sauce
1 Tbsp chopped coriander

Mix the chicken and chutney together and marinate for 10 minutes.
Place potatoes and capsicum in a saucepan and stir in the Tikka Masala sauce.
Bring to the boil, then simmer gently for approx 20 minutes or until tender, stirring occasionally.
Heat a heavy-based pan and stir fry chicken for 5-6 minutes or until cooked through.
Serve on top of the potatoes garnished with coriander.
