Mustard, orange kumara and potato wedges

Mustard and orange wedgesThese wedges are really easy to make – toss everything in a roasting pan and bake until delicious and succulent.

Serves 4-5

4-6 roasting potatoes, washed and sliced into wedges
1 kumara, washed and sliced into chunks
2 Tbsp vegetable oil
1 Tbsp wholegrain mustard
1 large orange, juice and rind
orange rind

Preheat oven to 200°C.
Place all ingredients in a roasting pan. Toss to coat.
Bake in preheated oven for 25-35 minutes or until golden brown and crunchy.
Turn several times during cooking.
Garnish with orange rind and serve.
